Pork Tenderloin Souvlaki with Greek Salad

Makes 4 servings

Ingredients for the Pork Souvlaki

  • 1 pork tenderloin, cut into bite sized pieces
  • 2 cloves garlic, chopped
  • 1 lemon, juice and zest
  • 1 tablespoon yogurt
  • 1/4 cup olive oil
  • 1 teaspoon oregano
  • 1/4 teaspoon salt
  • 1/4 teaspoon pepper

Directions for the Pork Souvlaki

Marinate the pork tenderloin in the list of ingredient posted above (ingredients for pork souvlaki). Let the meat sit in the fridge for 30 minutes to overnight.

Grill the pork tenderloin over medium-high heat until cooked, about 2-4 minutes per side.

Ingredients for the Greek Salad

  • 6 cups romaine lettuce, sliced
  • 1 cup tomato, diced
  • 1 cup cucumber, diced
  • 1/4 cup red onion, diced
  • 1/4 cup kalamata olives, pitted and coarsely chopped
  • 1/4 cup feta, crumbled
  • 1/4 cup tzatziki sauce
